Erythritol is a type of carbohydrate called a sugar alcohol, or polyol, which is a water soluble compound. It is used as a food additive and also a sugar substitute. It occurs naturally in many fruits and vegetables, but it is produced in large quantities through the process of fermentation.
Erythritol offers the same health benefits as other polyols, like being safe for teeth and suitable for people with diabetes. However, there are also two unique nutritional advantages. The first advantage is that at only 0.24 calories per gram, erythritol contains almost zero calories. This amount is only 6% of the calories in regular sugar. The second advantage is that the body has an excellent tolerance to it, which can avoid gastrointestinal discomfort. This contrasts with other sugar alcohols like xylitol or maltitol, which are known to cause discomfort.
Monk fruit is one sweetener that is commonly blended with erythritol to make a 1:1 sugar replacement that can replace sugar in equal amounts in recipes. Erythritol is the perfect addition to pure monk fruit extract because it acts as a bulking agent and has a similar taste to sugar.
